Happy Birthday EriN!

Well it’s that time of year when we celebrate Christmas, a New Year, the awesome Utah winter and of course my beautiful Erin’s Birthday. Can you believe she’s turning 29 this year…wait…wasn’t that a few years ago??? She keeps telling me she’s 29 this year, so who am I to disagree? My guess is she’ll be this age for a long, long time. Hey, I’m OK with it. When I’m 54, bald, fat and poor, I’ll still be the coolest guy on the block with a hot 20’s something wife.


Anyway, this picture is a cute little gem I dug out of a box and thought it would provide a little glance back in time to when life was much simpler and all you had to do to forget your worries was suck on a banana flavored popsicle. Isn’t she cute in this picture? She tells me it was taken just after her aunt got mad at her for stealing a popsicle without asking and that’s her pouting face.

Actually my beautiful Erin is 31 this year. She has accomplished a lot this year and we have grown so much as a couple. I just wanted her to know how much I love her and I hope she has an even better and more successful year in 2010. She is the love of my life and is the glue that keeps our little family together. She is perfect for me in so many ways it makes my head spin just thinking about it. So many miracles happened for us to be together, but that’s the way the Lord works. He’s very mysterious like that!

The Biggest Loser

My childhood friend Jill is awesome! She and eight of her friends decided to have their own "Biggest Loser" competition. Because I have a degree in dietetics, she asked me to come to their first meeting to teach them about how to lose weight through good nutrition & working out and to get them pumped up to start on their weight loss journey.

They have all put $100 each into a pot for the "biggest loser" to receive at the end of the competition. I don't know about you, but $900 sounds like a pretty darn good prize to me! They will be having weekly weigh-ins and everything! If you want to lose weight, this is the way to do it! It was so much fun and I was so impressed with their motivation and desire to make healthy lifestyle changes. If interested, you can follow their journey here. Good luck girls!

Tagged!

I've been tagged! The name of this game is to answer the following 10 questions and then tag 4 other friends to do the same on their blog pages...

To be honest, I told myself that I would never do this because I am not a big fan of talking about myself (I'm rather shy by nature) and because the whole "tagging" thing annoys Mike (he'll be mad when he sees I did this), but since my cute friend Joann is the person that tagged me, I just had to comply...and sorry it's taken me about two months to finally get to it. :)


1. Best thing you cooked last week? Chili Verde Pork with fresh homemade salsa and lime cilantro rice. My sis-in-law Camden sent this recipe my way and it was scrumptious.


2. If money, time and babysitting were no object, where would you go and with who? I have always dreamed of going to Egypt and riding a camel around the pyramids. I've always been fascinated by Egyptian history. I'd go with my amazing husband, of course. He makes everything fun!

3. When was the last time you cried? Last Sunday as I listened to Mike give Bryson his sweet blessing. I could feel, what I'm sure is just a glimpse, of the amazing love Heavenly Father has for little Bryson and for each of us. Bryson is such a little miracle and he will always know how special he is and how loved he is because he was adopted.

4. Five things you were doing 10 years ago: 1-attending Ricks College, 2- majoring in Interior Design, 3- dating guys I wasn't interested in, 4- living with fun roommates, 5- wondering when the man of my dreams would come into my life.

5. Five things you were doing 5 years ago: 1- enjoying life as a newlywed with the man of my dreams, 2-excitedly buying furniture & accessories for our new little condo (we just sold it...so sad!), 3- attending UVSC to get pre-requisites done to apply to the dietetics program at BYU, 4- working on the display/decorating crew at R.C. Willey, 5- Trying to talk Mike into filling out his side of our adoption paperwork (although I wasn't grateful at the time, I can now see that Mike dragging his feet was one of the little miracles that helped us find Bryson).

6. Five things you were doing 1 year ago: 1- graduating from BYU (BS in dietetics), 2-working full-time as a teacher at the MTC and loving every minute of it! 3-madly getting our adoption paperwork completed, 4- serving in the Primary, 5- hoping to become a mother soon.

7. Seven of your favorite hobbies: 1-Going to the gym (I love Gold Gym's killer Power Pump class!) and/or jogging the Provo River Parkway trail. 2-Designing floor plans. 3-Studying the Gospel. 4-Playing the piano. 5-Playing volleyball. 6- Reading self-improvement, fitness and nutrition books. 7- Quilting.


8. Five favorite foods: strawberry shortcake, thin-crust Hawaiian pizza, Cafe Rio salad, anything from China Lily, spicy black bean soup...yummy!



9. Five places you've been: 1-Ecuador (to pick my brother up from his mission), 2-Honduras (to do humanitarian work), 3-Hawaii (we went on a cruise around the Hawaiian Islands), 4-Ohio (we flew out there to get Bryson--we also both served missions there), 5- Mexico (we went to Mazatlan for our Honeymoon and Cancun for a company paid vacation)

10. Five Favorite Memories: 1- seeing my mom sitting on the porch waiting for me to come home from school each day when I was little, 2- everything about high school (madrigals, seminary council, dating, volleyball, dances, sports, etc), 3- the lives I saw changed on my mission, 4- sitting alone in our motel room with Bryson on my lap right after adopting him. I just sat and stared at him with tears streaming down my face because I felt SO MUCH love for him and felt so blessed to have him, 5- kneeling across the altar from Mike on our wedding day and again a few weeks ago when we were sealed to Bryson.

I Love the Fall!

Fall is by far my favorite season! I just can't get enough of it! Jogging the Provo River Parkway trail is so beautiful this time of year! There is no better motivation to get out and exercise than to know that amazingly colorful leaves & scenery and the smell of the crisp fall air await you! I could honestly spend all day out there if I had the time to. Lace up your running shoes and get out there before the leaves disappear!

Ward Gang Get Together

My sister and I were blessed with an amazing group of friends right in the very ward we grew up in. Even though in high school we each found other groups of friends to hang out with, we still did a lot together and remained close. When we were younger, the guys (7 of them) and girls (5 of us) always had some type of a prank war going on. We also loved to play neighborhood games like "stuck in the mud" and "jail breaker" every weekend night. We even developed crushes (which were always very dramatic) on each other--two of which resulted in marriage! Last night we had a really fun get together with some of the group and laughed ourselves sick! I love these guys and will always be grateful for their never-ending friendship.

Girls' Night Out

I love getting together with old friends. These girls were in my ward growing up and we became the best of friends. Last night we got together and visited one of our old Young Women leaders, who made such an impact in each of our lives.

Then we went out to eat and laughed until we were blue in the face! I love that no matter how long it's been since we were together it always feels like old times again. Thanks girls for a fun night out!

One Of My Heroes!

My dear friend, Christina, made her first trip to Salt Lake this weekend and I couldn't let her escape back to her home in South Carolina without spending some time with her before she left. So tonight we met up at the Gateway in Salt Lake and had such a fun time reminiscing about the experiences we shared together over six years ago. I first met Christina when she was 17 years old. I was a missionary in the area she lived (Warren, Ohio) and feel so blessed to have been chosen to bring the Gospel to her. I know that one of the reasons I was called to the Ohio Cleveland Mission was to find and come to know Christina. She is amazing and is such an example to me of courage, sacrifice, and faith. She truly is one of my heroes.
Her husband, Casey, is also a convert to the church. He was baptized by DeEsta Gailey, a high school friend of mine who also served in the Ohio Cleveland Mission. It was so nice to get to know him and learn about his incredible conversion story.

Do I Look That Familiar?

Today someone said something to me that I honestly hear at least once a week. What I hear is: “You look SO familiar to me…don't I know you from somewhere?” It always comes from complete strangers or from people I’ve just met for the very first time. It happens so frequently that when I’m approached with that question I just shake my head in amazement and laugh. It’s honestly something I hear so often that I had to add a post about it! What is it that people find so “familiar” about me? Are there really that many “Erin” look-a-likes wandering around for this to be happening as much as it does? It’s so strange.

Morning Jog

Every weekday morning around 7:00am, Bryson and I jog a five to seven mile segment of the Provo River Trail. It's a 15 mile trail that runs right along the Provo River from Utah Lake up through Provo Canyon.

Bryson loves the sound of the river and it soothes him right to sleep. Mommy enjoys the crisp fresh morning air and the amazing scenery. This morning we hit the top of the trail and took these pictures to share.

This last picture was taken during our jog a few days ago at the bottom end of the trail out by Utah Lake.
